Savoring the Splendor of Spring in the PNW: a short stint awaits.

Ah, back in the Pacific Northwest, where the air is infused with spring and the landscape transforms into a masterpiece of colors and flavors. It's a time when the magnolias have already put on their show, but up in the mountains, skiing still reigns supreme. The lilacs are peeking through, and the fiddlehead ferns are making their grand entrance, fueled by the couple days of sunshine amidst the rain showers. Despite the whims of the weather, there's a hopeful anticipation for the mushroom season ahead. With fingers crossed and eyes on the forest floor, we're gearing up for a fruitful foraging season, even if the rivers aren't flowing as vigorously as we'd like.
Reflecting on the ebb and flow of nature's rhythm, it's clear that each spring brings its own surprises and delights. My favorite farm friends at East of Eden in Bellingham are harvesting fresh asparagus, tons of arugula greens and chives galore!

As a chef deeply rooted in the land and its bounty, I find myself drawn to the vibrant flavors and textures that define the season. That's why I'm thrilled to share my plans for the month of May, filled with culinary adventures and immersive classes that invite you to join me on a journey of discovery.
May-June Culinary Adventure Plans and Classes:

PNW Mushroom Expedition and Cooking Class: Step into the enchanting world of mushroom foraging as we explore the lush forests of the Pacific Northwest. I am in the middle of planning with the team at Northwest Mushroomers Association to host a class soon, so be on the lookout! This class will be open to all but I encourage locals to become a NWMA member! Practice mindful foraging, discover the hidden gems of the forest floor, and indulge in the earthy flavors of wild mushrooms in delectable dishes crafted with love. We will explore different methods of cooking and preserving edible mushrooms, alongside mushroom identification and where to look for wild edibles. Arrive hungry! MINNESOTA! Edible Flower Workshop: Don’t hesitate on this one, friends. Tickets are available as of yesterday and they’re already sleeping fast! Hosted at the University of MN Landscape Arboretum Meyers Education Center: Immerse yourself in the beauty and diversity of edible flowers with a hands-on workshop that celebrates nature's edible treasures. Four-Courses of blossom-forward with hands-on learning both in the kitchen and in the food-scape gardens. The best part is this is a mother-daughter taught class! My mom, Audrey Busch is a resident Horticulturalist, and will lead us through the ins-and-outs of cultivating and choosing your edibles. I’ll lead from the garden to the wild side and back into the classroom-kitchen for a full journey of brightening your plate with blossoms.
